leftover taco meat (lean or grass fed)
sliced green pepper
sliced onion
omega 3 eggs
1T coconut or olive oil

preheat oil and frying pan to medium. Add sliced pepper and onion, and cook until almost soft. Add beef, scramble eggs and pour over everything. Cook until done.

Add black pepper and cayenne pepper if you like a kick.

Enjoy.

When cooking Paleo, it is generally a good idea to cook more protein the night before so you can either reheat in the microwave or eat it with eggs in the morning.

1 Tbs olive or coconut oil

Cook onion in oil until soft, 
reheat steak in microwave (DO NOT overdo it!)
Scramble and add eggs to onion.
Add sea salt / cayanne / chili powder / black pepper to taste (be as creative as you want)

Enjoy.
